Chloe had a meeting with their wedding planner shortly after Jake and Chloe we engaged. Chloe and her family would call themselves "foodies" with an appreciation for fine, fresh, and flavorful food. After being slightly frustrated with the cookie cutter caterers and bored by their uninspired menus, Chloe asked her Wedding Planner, Isabelle Klein for help.
Isabelle mentioned that her brother was a chef in Southern California looking to move to Colorado to begin a catering business. He currently has two high-end restaurants. Cherishing the fresh bounty of the sea at Rowe Seafood and the distinct flavors of New Mexico at Panxa Cocina, Owner and Executive Chef Arthur Gonzalez brings inspired cuisine to Long Beach, CA, that hinges on sustainably sourced ingredients. “I try not to be a follower—I cook with my gut, a lot of feeling and intuition,” he explains. “I love seeing what my suppliers have every day, and coming up with new dishes utilizing some of the best ingredients in SoCal.”
Chloe and Chef Arthur spoke on the phone where Chloe explained some of her and Jake's favorite flavors and what they would like to see on their menu. After the discussion Chef Arthur put together several options of completely custom menus inspired by Chloe and Jake.
